Owner Alexandra Lawson and her husband, Scott, didn’t just want to sell bagels. They wanted to perfect them. After moving to Texas in 2021, they spent two years fine-tuning a recipe that mimicked the taste and texture of a true New York bagel, even installing a specialized water filtration system to get it just right.
Add Lawson’s sister, Kennedy Fox, as head chef, and you’ve got a trio serious about their dough. The team launched in August 2024 and it’s been drawing bagel devotees ever since.
