From pop-ups to ramen dream

Chef and owner Vinh Thai left his corporate job in 2019 to train under Keizo Shimamoto of Ramen Shack in New York City. Returning to Austin, he launched a string of sold-out ramen pop-ups that earned Ramen512 the title of “Best Pop-Up of ATX” in 2020. In 2021, his ramen dream came to life with the Cedar Park brick-and-mortar location. Since then, Ramen512 has been voted one of Austin’s best new restaurants by Austin Monthly and Infatuation ATX.

What to order

The tonkotsu tantanmen fuses fiery dan dan noodles with ultra-rich tonkotsu broth, topped with spicy ground pork. The shoyu ramen delivers an umami explosion, thanks to a dashi infused with three types of dried fish. And for something different, try the brothless mazesoba. Whatever you choose, you’ll find flavors that highlight care, craft, and bold creativity.
