I finally made it to Conejos for the first time, and I can’t believe I hadn’t been sooner. It had been on my list for a while, and now I totally get why people like it so much.
The atmosphere was great. It felt fun and lively, but still easy to relax and enjoy being there. The food was delicious, and I’m not much of a drinker, but I was almost tempted to order one of the spicy margaritas.
If you haven’t been yet, now is a good time to put it on your radar, especially since they’re expanding. They’re opening two new locations, one in Round Rock expected around June or July, and one in Cedar Park expected around October or November. That feels like a pretty good sign that people are loving it as much as we did!
